These minced beefs stuffed mini peppers are the bomb! The small size of the peppers makes them the perfect size for filling them up a little bit like you would do it with tacos. To take the guess work out of meal planning and having fun and variation I have Mexican Wednesdays, Italian Tuesdays, Arabic Fridays, etc. For our last Mexican Wednesday, I was thinking of how I can make a healthier version of meat loaded tacos, baked with cheese. And voila, that’s it I filled the mini peppers with minced beef, topped it with cheese, baked it and then I added green chilis, sour cream and some cappers. Guacamole is a great addition to it and some enchilada sauce. My family loved it and will be definitely a staple in our kitchen now.

The best thing on Keto? You can eat all the fats and don’t need to fear it. You can eat it and will still lose weight. That’s the perfect form of nutrition for me. Of course I am not eating heavy cream loaded sweets treats all the time, but I know that I can have it every now and then. I am eating normally various vegetables, some berries, moderate to high proteins and lots of healthy fats. Sweet treats I only eat sometimes. But if I am in the mood for a good dessert I like this one very much.
It comes with really dark chocolate, heavy cream, eggs and xylitol. It is fluffy and full of chocolate.
½ cup xylitol
2 chocolate bars
½ cup of butter
3 egg whites
3 egg yolks
2 cups of heavy cream
