This dish is one of my favorites. It is fast, easy, filling and very delicious.
Even my kids like it. They like to eat the normal lasagna, but when we want to make a healthier version of it, i opt for that Eggplant lasagna.
Eggplants are a great vegetable for ketogenic cooking and i use them a lot in all different possibilities. They are great in a salad, they are even great as a salad - think of babagaboush, they make great mini pizzas - you just top slices of them with marinara sauce and cheese ( one of my favorites as well)
So here is the recipe now to my favorite Eggplant Lasagna dish, which is a family pleaser.
1 large Eggplant (sliced and prefaced in the oven- topped with 2 tbsp olive oil)
2 cans of tinned tomatoes
500 grams of ground beef
salt, pepper
2 tablespoons tomato mark
1 tsp. Paprika powder, cumin and coriander powder
3 tbsp Olive oil
1 cup full fat yoghurt
1 cup heavy cream
1 cup cheese of your choice

Fats play a major role in the ketogenic diet. That is a good reason to see which are good for you and your health and which are bad and should be avoided. 60 % of our brain is fat, that's a good reason to have a closer look at the fats you are consuming.
To stay healthy you need to get Omega 6 and Omega 3 fats. The best sources of fat for your health are: nuts and seeds, like walnuts, macadamia nuts, almonds , pumpkin seeds, chia, sesame, hemp, than the fishes like salmon, sardines, herring, mackerel, extra virgin olive oil, extra virgin coconut oil/butter. Coconut oil is a saturated fat, but it is actually good for you. A good source of fat are grass fed animals as well. The quality of the meat is really important here- for you and the planet- so go only for grass fed.

Ingredients:
130 g soft butter
50 g Xylitol
Vanilla mark
120 g almond meal
2 Tablespoons sliced almonds
2 Tablespoons heavy cream
Preparation:
Heat the oven to 180 degrees
Mix the butter, sugar, and vanilla until soft, then add the eggs and whip it until it is light and creamy.
Add the almond meal, almonds and the heavy cream. Fill into the forms and bake for 15 minutes. Let it cool down before you do the frosting.
For the frosting:
100g soft butter and 200 g cream cheese, 30 g powdered xylitol
Mix everything together and add vanilla flavor to it.

Sometimes you eat with the ketogenic diet quiet a lot meat and fish. This creamy vegetable curry is perfect for those days when you are not in the mood for meat or fish.
