Chocolate Zucchini Bread

 

I made this super soft and moist Zucchini Bread which you should definitely try.

You could even eat it for breakfast. It is keto, low carb high fat and it has lots of healthy ingredients. If you like to start with the ketogenic baking - this one here is a good starting point, because it is quick and easy and will always be delicious. 

 

Ingredients:

  • 4 eggs
  • 1 cup xylitol
  • 1 tsp gingerbread spice 
  • 1 tsp baking powder
  • 1 cup coconut oil 
  • 1/2 zucchini shredded
  • 3 cups hazelnut (ground)
  • 1 cup oatmeal 
  • 3/4 cup cocoa powder 

 

 

How to:

  1. beat the eggs with the xylitol
  2. add all the remaining ingredients and beat it - but only shortly
  3. pour it in a baking form (I lined mine with a baking sheet)
  4. bake for 45 minutes at 180 degrees

Eggplant Lasagna

 

 This dish is one of my favorites. It is fast, easy, filling and very delicious.

Even my kids like it. They like to eat the normal lasagna, but when we want to make a healthier version of it, i opt for that Eggplant lasagna. 

Eggplants are a great vegetable for ketogenic cooking and i use them a lot in all different possibilities. They are great in a salad, they are even great as a  salad - think of babagaboush, they make great mini pizzas - you just top slices of them with marinara sauce and cheese ( one of my favorites as well) 

 

So here is the recipe now to my favorite Eggplant Lasagna dish, which is a family pleaser. 

Ingredients:

1 large Eggplant (sliced and prefaced in the oven- topped with 2 tbsp olive oil)

2 cans of tinned tomatoes

500 grams of ground beef

salt, pepper

2 tablespoons tomato mark

1 tsp. Paprika powder, cumin and coriander powder

3 tbsp Olive oil

1 cup full fat yoghurt

1 cup heavy cream

1 cup cheese of your choice

Chocolate Zucchini Bread recipe

Chocolate Zucchini Bread - the fast and easy way. Shred the zucchini, ad some eggs and flour and done- put it in the oven and hop on the couch. 

 

You can have the bread with some whipped cream, some butter, or just plain like it is. It is a bit sweet, but not too much and moist and dense. 

 

This healthy bread/ cake is  a basic staple at our home and if i really want to have something sweet if often tend to bake that one or pull a piece out of the freezer, heat it up and top with a little bit of butter. Fats play a major role in the ketogenic diet. That is a good reason to see which are good for you and your health and which are bad and should be avoided. 60 % of our brain is fat, that's a good reason to have a closer look at the fats you are consuming. 

To stay healthy you need to get Omega 6 and Omega 3 fats. The best sources of fat for your health are: nuts and seeds, like walnuts, macadamia nuts, almonds , pumpkin seeds, chia, sesame, hemp, than the fishes like salmon, sardines, herring, mackerel,  extra virgin olive oil, extra virgin coconut oil/butter. Coconut oil is a saturated fat, but it is actually good for you. A good source of fat are grass fed animals as well. The quality of the meat is really important here- for you and the planet- so go only for grass fed. 

 

Fats to avoid are: factory farmed animals, transfers, soy oil, saffloweroil, cornoil, canolaoil, restaurant fried foods- because they mostly use soy oil or other bad oils.

Ingredients:
500g mushrooms (cut into chunks)
1 handful dried mixed mushrooms
1 litre chicken stock
1 cup heavy cream
1 onion (cut into chunks)
2 garlic colves (whole) 
2 tablespoons butter
1/2 teaspoon salt
pepper
2 Tablespoons lemonjuice (fresh lemon)
 
Instruction:
  • heat the butter in a pan and fry the onions until golden
  • ad the rest of the ingredient and let simmer for 20 minutes
  • blend it and taste with pepper, salt and lemon

Keto Vanilla Muffins

I really love muffins and cupcakes. If I am invited to a picnic or afternoon with the kids I bake some muffins.

This vanilla muffin is one of my favorites and perfect for the festive times ahead of us. They are fast and easy, super delicious and an eyecatcher.

Here is the recipe:

Ingredients:

130 g soft butter

50 g Xylitol

Vanilla mark

120 g almond meal

2 Tablespoons sliced almonds

2 Tablespoons heavy cream

Preparation:

Heat the oven to 180 degrees

Mix the butter, sugar, and vanilla until soft, then add the eggs and whip it until it is light and creamy.

Add the almond meal, almonds and the heavy cream. Fill into the forms and bake for 15 minutes. Let it cool down before you do the frosting.

For the frosting:

100g soft butter and 200 g cream cheese, 30 g powdered xylitol

Mix everything together and add vanilla flavor to it.

Cauliflower-Curry with Cashews and Coconut

You will love that curry!!

 

Sometimes you eat with the ketogenic diet quiet a lot meat and fish. This creamy vegetable curry is perfect for those days when you are not in the mood for meat or fish. I cook this meal on a regular basis and even my kids like it. Please try it and tell me in the comments how it was. By the way it is vegan, vegetarian, paleo and keto.

 

 

Ingredients:

1 piece of ginger (4cm peeled and cut roughly)

4 cloves of garlic

1 green chilli

Salt

4 Tbsp Ghee

1 onion (diced)

1 ½ Tsp Coriander powder

1 ½ Tsp Cumin powder

1 Tsp red pepper powder

½ Tsp Cayennepepper

½ Tsp Garam Masala

1 big head of cauliflower (cut)

1 red bell pepper (diced)

½ eggplant (diced)

500 ml coconut milk

100g Cashews

1 small bunch of coriander green

½ lemon

 

 

Preparation:

 

Mix the ginger, chilli, some salt and garlic in the mixer until it forms a paste
