Cherry Cake

 When I am having family or friends over, I like to make that Cherry cake. It just looks so festive with the chocolate biscuit layer, the curd cheese and the cherries on top. I will bake it this Sunday. Do you like to try it too? What’s your favorite festive cake?

 

Ingredients:

For the biscuit:

4 eggs

¾ cup  xylitol

A little bit of salt

1 tsp vanilla extract

1 hot espresso

100g dark chocolate (shredded)

2 cups shredded hazelnuts and 1 tsp baking powder

 

For the cream layer:

500 g curd cheese or mascarpone

1 cup xylitol

250 ml heavy cream

1 tsp Vanilla extract

1 tsp xanthan gum

 

 

For the cherries:

1 glas of cherries

2 tsp gelatine

 

 

Preparation:

 

Mix the eggs, xylitol and hot espresso for 3 minutes

Add the meals, vanilla extract and chocolate and stir carefully – not too much so that it will stay fluffy and airy. If you beat it too much the biscuit will be very hard.

Bake for 20 minutes at 180 degrees

Keto Chocolate-Peanut Butter Cups

 

I really like peanuts and chocolate. Why not mix them together and make those super delicious little treats, like this keto chocolate peanut butter cups? If you are looking for a really easy to make keto treat, then this one is for you.

 

It is just the layers which needs to cool before you can do the next step which takes a bit time. But i mean the fridge does it for you and you can relax meanwhile.

Let's dive in:

Ingredients:

2 cups of dark chocolate- really dark 80-90 percent cocoa

1/2 cup xylitol

1/2 cup peanut butter without sugar

1 tbsp coconut oil

 

Insturctions:

Melt the chocolate with the coconut oil and the sugar ad one layer of the chocolate mixture to a small muffin form and transfer to the fridge to cool down ad on tsp of peanut butter on the chocolate layer cover it with the last layer of chocolate and let it cool down in the fridge. When finished you can store it in the fridge and enjoy it.

Lamb Pumpkin Stew

This stew in the instant pot is a lie saver!! A bit dramatic, but it really is. I am a busy working mom of 3 very active boys and i try to get every evening a health meal on the dinner table. This is the time, when my instant pot can show his magic and transforms chunks of beef or lamb and some veggies into a super delicious stew which everybody in your family will love.

 

Get some cauli-mash or brokkoli or green beens as a side and you are golden. The taste which the meat and the bones give to the sauce is really awesome. If you don't have an instant pot, you should really think about getting one. It is great. You get a healthy dinner ready in 30 minutes. It is not only for stews, you can make soups in it, cook potatoes really fast, steam vegetable, cook rice and so much more. I use it to make bone broth too.

2 minute Avocado Dip

Creamy deliciousness in its best form. Avocado is such a good fat for your body and in this dip I could eat it everyday. You can have it with keto crackers, pepper or carrot sticks and ad it to your meals or just eat it like it is.

 

I know it is an easy recipe but I think some easy recipes are always good to have and if you don’t know how to do a really nice avocado dip- this one is for you.

Mexican Stuffed Mini Peppers Keto

 

These minced beefs stuffed mini peppers are the bomb! The small size of the peppers makes them the perfect size for filling them up a little bit like you would do it with tacos. To take the guess work out of meal planning and having fun and variation I have Mexican Wednesdays, Italian Tuesdays, Arabic Fridays, etc. For our last Mexican Wednesday, I was thinking of how I can make a healthier version of meat loaded tacos, baked with cheese. And voila, that’s it I filled the mini peppers with minced beef, topped it with cheese, baked it and then I added green chilis, sour cream and some cappers. Guacamole is a great addition to it and some enchilada sauce.  My family loved it and will be definitely a staple in our kitchen now.

Easy keto Mousse au Chocolate

 

The best thing on Keto? You can eat all the fats and don’t need to fear it. You can eat it and will still lose weight. That’s the perfect form of nutrition for me. Of course I am not eating heavy cream loaded sweets treats all the time, but I know that I can have it every now and then. I am eating normally various vegetables, some berries, moderate to high proteins and lots of healthy fats. Sweet treats I only eat sometimes. But if I am in the mood for a good dessert I like this one very much.

 

It comes with really dark chocolate, heavy cream, eggs and xylitol. It is fluffy and full of chocolate.

Rocher Keto Cookies

The weather here in Berlin is grey in grey, cold and a mixture of rain and snow. Some days it rains and is not so cold, some days it snows and is a little bit colder. The perfect weather to cozy up on the sofa with a good book, a cup of tea and a nice and healthy cookie.

 

I really like Rocher and thought about how I could create cookies that are a little bit like that.  And now they are ready, and I can introduce you to my sort of Rocher Cookies which are moist, chewy, chocolaty, rich and hazelnutty. I just thought that it would taste great to have a chocolate chip in the middle of the cookie. But that Is for the next time I bake them. Now they are just made of ground hazelnuts, coconut oil, xylitol and cocoa powder. Then covered up with crushed hazelnuts and baked to perfection. Of course, they are keto and gluten free.

Peanut Butter Bars

 

Super easy to make peanut butter bars with a crunchy cookie base, tahini peanut butter filling topped with dark chocolate. Those bars are paleo, gluten free and keto!


I often use Tahini in my kitchen, because it is very healthy and makes everything creamy with a soft nutty flavor. It is basically ground sesame seeds which are very rich in calcium- so it’s good for your bones too. One point more to use it more often in your baking and cooking. I always like to have one or two keto treats in the house and those bars are my absolute fave.

They are even great to serve for an afternoon tea to your non keto friends.


1st layer:
Ingredients:
¼ cup Xxylitol
3 cups hazelnut meal or almond meal
½ cup coconut meal
½ cup coconut oil

2nd layer:
2 cups peanut butter
1 cup tahini
½ cup coconut oil
¼ cup xxylitol

3rd layer:

Cauliflower Casserole Dish

 

It is so dark and cold here in Berlin lately, that I am always wearing warm socks and comfy sweaters and want to stay home. Normally I always want to be outside, but these days it is so cold, rainy and dark. I don’t like it. I am more of a summer person. What is really not good to be, when you are living in cold Germany where the winter time seems to be soooooo long and the summer way too short.

 

I really needed a comforting casserole dish, which pushes all the buttons. It is creamy, rich and topped with a cheese crust. Cauliflower, pumpkin and sage make a great combination and makes this casserole to a family favorite. In that form my kids actually eat their veggies (hence cauliflower). This dish is keto.

Super delicious Keto Energy Balls

 

When you are on the ketogenic diet you are normally not hungry between the meals. I have my bulletproof coffee in the morning then lunch and dinner. That’s it- no snacks in between. But sometimes I am on the go the whole day and can’t have lunch. That’s when I opt for a energy ball instead of a bagel or a donut. I don’t say that it’s better to quit lunch for an energy ball or two, but for me it saves me from not grabbing something carb heavy from the next bakery.

You can do the energy balls in lots of different versions- just be creative. Mine is with gingerbread spice and cinnamon. I discovered my love for the gingerbread spice during last Christmas days and now I put it in lots of my desserts and baked goods. Tap the link in my bio for the recipe.
