When I am having family or friends over, I like to make that Cherry cake. It just looks so festive with the chocolate biscuit layer, the curd cheese and the cherries on top. I will bake it this Sunday. Do you like to try it too? What’s your favorite festive cake?
For the biscuit:
4 eggs
¾ cup xylitol
A little bit of salt
1 tsp vanilla extract
1 hot espresso
100g dark chocolate (shredded)
2 cups shredded hazelnuts and 1 tsp baking powder
500 g curd cheese or mascarpone
1 cup xylitol
250 ml heavy cream
1 tsp Vanilla extract
1 tsp xanthan gum
For the cherries:
1 glas of cherries
2 tsp gelatine
Mix the eggs, xylitol and hot espresso for 3 minutes
Add the meals, vanilla extract and chocolate and stir carefully – not too much so that it will stay fluffy and airy. If you beat it too much the biscuit will be very hard.
Bake for 20 minutes at 180 degrees

2 cups of dark chocolate- really dark 80-90 percent cocoa
1/2 cup xylitol
1/2 cup peanut butter without sugar
1 tbsp coconut oil
Insturctions:
Melt the chocolate with the coconut oil and the sugar ad one layer of the chocolate mixture to a small muffin form and transfer to the fridge to cool down ad on tsp of peanut butter on the chocolate layer cover it with the last layer of chocolate and let it cool down in the fridge. When finished you can store it in the fridge and enjoy it.

This stew in the instant pot is a lie saver!! A bit dramatic, but it really is. I am a busy working mom of 3 very active boys and i try to get every evening a health meal on the dinner table. Creamy deliciousness in its best form. Avocado is such a good fat for your body and in this dip I could eat it everyday. You can have it with keto crackers, pepper or carrot sticks and ad it to your meals or just eat it like it is.

These minced beefs stuffed mini peppers are the bomb! The small size of the peppers makes them the perfect size for filling them up a little bit like you would do it with tacos. The best thing on Keto? You can eat all the fats and don’t need to fear it. You can eat it and will still lose weight. That’s the perfect form of nutrition for me. Of course I am not eating heavy cream loaded sweets treats all the time, but I know that I can have it every now and then. I really like Rocher and thought about how I could create cookies that are a little bit like that. And now they are ready, and I can introduce you to my sort of Rocher Cookies which are moist, chewy, chocolaty, rich and hazelnutty. I just thought that it would taste great to have a chocolate chip in the middle of the cookie. But that Is for the next time I bake them. Now they are just made of ground hazelnuts, coconut oil, xylitol and cocoa powder. Then covered up with crushed hazelnuts and baked to perfection. Of course, they are keto and gluten free.

Super easy to make peanut butter bars with a crunchy cookie base, tahini peanut butter filling topped with dark chocolate. Those bars are paleo, gluten free and keto!
I often use Tahini in my kitchen, because it is very healthy and makes everything creamy with a soft nutty flavor. It is basically ground sesame seeds which are very rich in calcium- so it’s good for your bones too. One point more to use it more often in your baking and cooking. I always like to have one or two keto treats in the house and those bars are my absolute fave.

It is so dark and cold here in Berlin lately, that I am always wearing warm socks and comfy sweaters and want to stay home. When you are on the ketogenic diet you are normally not hungry between the meals. I have my bulletproof coffee in the morning then lunch and dinner. That’s it- no snacks in between. But sometimes I am on the go the whole day and can’t have lunch. That’s when I opt for a energy ball instead of a bagel or a donut. I don’t say that it’s better to quit lunch for an energy ball or two, but for me it saves me from not grabbing something carb heavy from the next bakery.
