Keto Breakfast Muffins

Almost everyone is making bread while on quarantine. And why not? With all of the free time that we have right now, it’s the perfect opportunity to try some cool new recipes that the whole family will love.


If you’re looking for a good low-carb bread recipe, why not try a deliciously-filling muffin, best-served hot! Serve it fresh in the morning to kickstart your day. This Breakfast Muffin recipe is keto-recipe and will definitely NOT kick you out of ketosis. It’s very easy to make as well!

Here are the ingredients:

  • 1 1/2 cup almond flour
  • 1/4 cup flax seeds (slightly crushed)
  • 1 TBSP Chia Seeds
  • 1/2 tsp cinnamon powder
  • 2 tsp baking powder
  • A pinch of salt to taste
  • 1/4  cup stevia sweetener
  • 1 egg
  • 1/3 cup coconut oil


  1. Preheat the oven to 350 F. Grease a mini muffin tin very well with coconut oil so the muffins will pop right out after baking.
  2. Stir together all of your dry ingredients so that the sweetener, almond flour, baking powder, and salt are evenly incorporated. Whisk in the eggs, then fill each muffin cup around 2/3 of the way full. 
  3. Sprinkle the Chia seeds on top.
  4. Bake 10 minutes on the oven center rack, then take out of the oven and let them cook another 10 minutes. Go around the sides of the muffins with a knife and pop them out.

See how easy that is? You can have a bit of fun and add more ingredients like chorizo or scallions to the bottom of the tin. You can also add bacon, blueberries, cheese, broccoli, ham, or chicken! 


It’s safe to indulge in these goodies because they only have less than 1 net carb per muffin. I hope you and your family will love this recipe as much as mine did!
